 We are going over to the eastern part of the country to learn how to prepare one of their most popular soups which is the Ofe Nsala. This delicious soup is popularly tagged as the “White Soup” because of its light cremish color and this is due to the absence of palm oil.

Many people have been known to prepare this soup according to how they want it but many igbo’s would tell you that the authentic way you can prepare the ofe nsala soup is the use of fresh cat fish which gives the soup its unique taste. Now there are quite a number of us who don’t like fresh catfish, this can be substituted with conger eel or catfish fillets.

The Ofe Nsala and the Afia Efere which is a white-soup prepared in the efik style is quite similar the only difference are the other condiments added to the Afia Efere which gives it another taste. This Extra Condiments is what makes it different from the Ofe Nsala.

For this recipe you can either use fish only or you can use assorted meat (which I prefer), below is a list of the ingredients you need to prepare this delicious soup;
What you’ll need:
  • 1 medium sized catfish or conger eel
  • Yam powder or 5 small raw yam cubes
  • 2 tablespoon of choopped utazi leaves
  • 2 teaspoon of grouned cray fish
  • 1 tablespoon of chopped onions
  • Chooped or grounded chili or scotch bonnet peppers
  • Stock fish
  • Dried fish
  • 5-10 pieces beef or pieces chicken
  • 2-3 stock seasoning cubes
  • salt to taste
