Groundnut soup is a very popular delicacy in some Southern and Northern parts of Nigeria albeit prepared differently in both parts. Groundnut soup is particularly common amongst the Etsako people
of Edo state. It’s known as Omisagwe to the Etsakos.It is prepared the same way as Egusi Soup so you can apply the two methods of preparing Egusi Soup to Groundnut Soup with great results. It can be made with or without vegetable leaves and it can be thickly or a watery consistency. Bitter leaves are used for groundnut soup traditionally but it can be replaced with Ugu or Spinach leaves, where Bitter leaves are unavailable.
Ingredients needed…
- Groundnuts or peanuts
- Meat/Fish or any other protein you desire
- Blended tomato
- Vegetable oil
- Chopped onions
- Garlic
- Ginger
- Seasoning to taste
